One of our favorite ways to cook the Cotechino is with lentils. Sauté your aromatics of choice ( carrot, onion, celery, etc ) add your Raven & Boar Pork Bone Stock ( available on F2T! ), add your lentils ( preferably black or green ) and the Coetchino. Simmer gently until lentils are cooked. Remove the Cotechino, let rest, slice and enjoy while warm.
